So throughout my daily shenanigans with the pre-schoolers, my co-worker and I talk about a lot of different things. And by a lot of different things, I mean FOOD! :D For the past month, she would occasionally bring up “taco soup” until one day I couldn’t take it anymore, and pleaded for the recipe. I slightly altered it a little because: A.) We’re a bigger family, and B.) I wanted leftovers.
So without further ado, here’s the recipe!
Note: I believe it would serve about 3-4 people, following this exact recipe; however, again, I did double the recipe. If you want a bit more (approx. 5-7), just do what I did and you’ll be dandy. My advice is, you can never go wrong with a bit more! :)

Ingredients:
1-lb. lean ground turkey or hamburger meat
1- packet taco seasoning mix (there are many varieties of mild-spicy-I chose the “original/regular” because I don’t like spicy food)
1-large can PETITE chopped tomatoes (or 2, 15oz. cans)
1- (15oz.) can tomato sauce
2- (15oz.) cans black beans (undrained)
2- (15oz.) cans corn (undrained)
Salt & Pepper- For seasoning meat- add as desired (I wouldn’t put too much though, seeing as you’ll be adding in the taco seasoning, as well.)
Shredded Cheddar Cheese- add as desired
Instructions:
1.) In a large stock pot or pan, brown the meat, until pink disappears and is thoroughly cooked. Add salt/pepper, then the taco seasoning and saute for about 5 minutes.
2.) Combine in the crockpot: tomatoes, tomato sauce, black beans, and corn.
3.) Add the ground meat into the crockpot.
4.) Stir the contents, until mixed.
5.) Add cheddar cheese. You can put in as much or as little as you want. It is completely up to your discretion.
6.) Cook on low-medium heat for 3-5 hours. It depends on the strength of your crockpot; you may put it on high if you feel it is not cooking up to speed.
(Optional) Serve with tortilla chips, sour cream, shredded cheese.
